Green Chiles from New Mexico  

The CHILE  has become symbolic of Southwestern culture and foods.  New Mexico has long been considered the heart of chile country and considered by most to produce the best and tastiest chiles.  The Missilla valley running along side the

Rio Grande in central southern New Mexico provides perfect conditions for growing the

best;  sunshine (350 days a year), warm dry air and warm soil. 

 

Green and red chiles are from the same plant.  In late summer, the green chiles pods are harvested and provide a unique taste and heat.  If allowed to Ripen, the pods turn red and the taste becomes sweeter and mellow, a completely different taste from the green.

 

After the green chile pods are harvested, they are roasted to caramelizes the chile's natural sugars, enhancing the authentic, robust green chile flavor.  There are some benefits to green chiles.  Green Chile is fat free, low on calories, almost no cholesterol and has lots of fiber and Vitamin C.
